I love Shishito peppers and they are so simple and delicious without much effort. I charred these in a cast-iron skilled and drizzled them with chili oil, a sprinkle of maldon and a handful of freshly torn cilantro. Shishitos are not hot peppers, but occasionally, you will find one with a little bite to it. Shishitos make a great colorful, flavorful appetizer for having friends over or just a simple snack to enjoy anytime.
Charred Shishito Peppers with Red Chili Oil & Cilantro
1 lb Shishito Peppers
1 tbsp Chili oil (or extra virgin olive oil)
1 handful freshly torn cilantro
1 lime, squeezed (optional)
Heat a cast iron skillet over medium-high heat. In a large bowl, toss peppers with chili oil and add to hot skillet. Cook peppers until a char begins to form, tossing occassionally. Serve hot, seasoned with maldon and garnished with torn cilantro and a squeeze of lime juice (optional).
